Cooking with Coffee

As the second most traded commodity on the planet after oil, coffee is a beverage enjoyed by millions of people across the globe. While many people consider coffee to be one of the most delicious drinks around, it is often underappreciated as a cooking ingredient. Utilising the unique flavours of coffee to great effect, these recipes will surprise and amaze you in equal measure.




This interesting coffee rub adds a little extra to a great burger recipe and works incredibly well with bacon, cheese and a hefty dose of barbeque sauce. The rub is made from one tablespoon of freshly ground coffee, two teaspoons of golden brown sugar, two teaspoons of freshly ground black pepper, half a teaspoon of ground coriander, half a teaspoon of dried oregano, and a final half teaspoon of sea salt.

These should be mixed in a small bowl and left to sit at room temperature for a while. This can then be rubbed into your burgers before cooking.


This typically Italian dish is a great way to enjoy your ice cream, particularly if you love the incredible combination of coffee and chocolate. The simple ingredient list requires one pint of chocolate ice cream, eight tablespoons of finely chopped bittersweet chocolate, eight tablespoons of hot and freshly brewed espresso, and eight tablespoons of dark rum.

Share the ice cream into four coffee cups and pour two tablespoons of a mixture of all the other ingredients over the top. Serve immediately and enjoy immensely.



Perfect as a tasty snack or thoughtful gift, these candied walnuts are tasty and easy to make once you’ve got the ingredients. You’ll need some non-stick vegetable oil spray, 2/3 cup of sugar, two tablespoons of ground espresso beans, one tablespoon of instant espresso powder (for an extensive coffee product range click here), ½ teaspoon ground cinnamon, ¼ teaspoon salt, one large egg white and four cups of walnut halves.

Begin by preheating the oven to 160C and prepare a large baking sheet with the non-stick spray. Whisk the sugar, coffee and cinnamon together in a bowl. In a separate bowl, whisk the egg white until frothy and add the walnuts. Sprinkle the walnuts with the first mixture and spread the coated nuts over the baking sheet. Bake for five minutes, make sure the walnuts aren’t stuck and then bake for a further five minutes.

Make sure you let them cool sufficiently before eating.

  6. I adore coffee in just about any form. I've seen recipes for affogatto in the past and thought it sounded delicious. I'll have to try it during the upcoming holidays. I always add espresso powder to chocolate baked goods since in just enhances the chocolate's flavor. Now I'm wondering what my husband, The Picky Eater, would think of coffee rubbed burgers. I guess I'll just have to try it without telling him!
